Consider that the next time you pass the precut and prewashed vegetables at the grocery. You might balk at their prices, but if convenience is what it takes to get you eating more produce, it might be worth the cost.
The reality is, most Americans don't eat enough fruits and vegetables. For many, it's a matter of time.
Fortunately, prepared produce has reduced the drudgery of washing, trimming, peeling and cutting to a matter of simply opening bags.
They also have a freshness advantage. State-of-the-art packaging allows bagged produce to continue to "breathe," preventing fermentation and decay. This means the vegetables stay fresh longer in your refrigerator.
Of course, convenience isn't everything. You'll also want to make all this produce taste exciting and delicious.
This quick and simple recipe for shredded broccoli with Indian spices takes packaged fresh broccoli coleslaw, dresses it up with spices and turns it into an exotic vegetable sauté that goes especially well with grilled fish or chicken.
If you like, add 1/4 cup of golden raisins for a touch of sweetness. Precut shredded carrots can be substituted for the broccoli.

In a large nonstick skillet, heat oil over medium-high. Add the onion and sauté until soft, about 4 minutes. Add cumin seeds, turmeric and cayenne pepper and cook until the spices are fragrant, about 1 minute longer.
Stir in the broccoli slaw, lemon juice and water. Reduce heat to low, cover the skillet and let the mixture simmer gently until the vegetables are tender, about 5 minutes. During cooking, add water if necessary to prevent sticking. Season with salt and pepper.
